Fill a large pot with water and bring it to a rolling boil.
Prepare the fillings and toppings as described in the Fillings and Toppings tabs.
Make the dough as described in the Doughs tab.
Let the dough sit for 10 minutes.
Separate 1/3 of your dough ball. There are a few tricks to making the dumplings shown in the videos. Roll the dough out into a rectangle shape until it is thin, but not too thin that it will break (about 1/16 thick).
About 2 inches from the edge of the rolled out dough, make a row of mounds using the filling. Space the pierogi mounds about 1 to 2 inches apart. Fold the dough from the edge over all the mounds and pat down to lightly compact each mound.
Cut the pierogi out using a pierogi cutter or a coffee mug. If you are using a coffee mug, you will need to crimp the pierogi dumpling using a fork.
Place the pierogi on a flour-coated cookie sheet.
Take few pierogi from the cook sheet and boil the pierogi.
Place a few pierogi in the boiling water at a time. When they float to the top, they are done. One by one, take the pierogi out of the pot and follow your topping instructions to apply the topping. Once you have applied the topping, place the pierogi on a platter or in a container.
You are now ready to enjoy homemade pierogi!
Use the leftover dough in your next batch. If the dough gets too hard to work with, discard it.
